These Gluten-Free Gingerbread Cookies are the perfect treat for anyone looking to indulge in a sweet and spicy snack without the gluten. These have been a staple in the Hailey house because they are simple to make and the kids love them. They are packed with rich flavors of molasses, almond butter, and a blend of spices, these cookies are soft, chewy, and absolutely delicious. And yes, they are as fun to make as they are to eat. Let’s dive into the recipe!

  • 2 Eggs
  • 1/4 Cup Butter (Softened)
  • 3 Tbsp Molasses
  • 1/4 Cup Almond Butter
  • 1/2 Cup Packed Brown Sugar
  • 1/4 Tsp Salt
  • 3/4 Tsp Ground Ginger
  • 1/2 Tsp Ground Cinnamon
  • 1/4 Tsp Ground Nutmeg (Optional)
  • 1/2 Tsp Baking Soda
  • 1 ¼ – 1 ¾ Cups Gluten-Free Flour
  • 2 Tbsp Powdered Sugar (for dusting)

Equipment Needed:

  • Mixing Bowls – Stainless Steel Mixing Bowls Set (Set of 6)

Instructions:

Step One – Prepare the Dough: Combine eggs, softened butter, molasses, almond butter, brown sugar, salt, spices, and baking soda in a bowl. Mix well, then gradually add gluten-free flour.

Step Two – Chill the Dough: Cover and refrigerate the dough for at least one hour or overnight.

Step Three – Bake the Cookies: Roll the dough into balls, freeze for 5 minutes, then bake for 12-14 minutes. Let cool slightly and press softly with spatula or turner.

Step Four – Finish the Cookies: Dust with powdered sugar after the cookies hit room temperature or enjoy with out!
