- 1/8 Tsp Salt

- 1/2 Cup almond milk
- 10 Fresh mushrooms, finely chopped
- 1 Bell pepper, diced
- 1 Cup feta cheese (plus extra for topping, if desired)

Instructions
Step 1 – Preparation: Preheat your oven to 350°F.
Step 2 – Mix Wet Ingredients: In a large mixing bowl, gently whisk together the eggs and almond milk.
Step 3 – Add Spices: Incorporate turmeric, garlic powder, onion powder, salt, pepper, and baking powder.
Step 4 – Fold in Veggies & Cheese: Add the chopped mushrooms and diced bell pepper. Stir gently. Next, fold in the feta cheese.
Step 5 – Prepare Muffin Tins: Heavily grease your muffin tins. We use the Amazon basics muffin tins, but I do not recommend them. I need to level up our muffin tin game!
Step 6 – Fill and Bake: Pour the egg mixture into the muffin tins, filling each about 1/2 full. If desired, sprinkle a little extra feta on top.
Step 7 – Bake: Place in the preheated oven and bake for 15 minutes. Rotate the pans and bake for an additional 12-15 minutes.
Step 8 – Cool & Serve: Let them cool for a few minutes before serving.
